South American spice aji amarillo is the 2025 Flavor of the Year, according to seasonings and spices maker McCormick. The company predicts the pepper’s menu appearance will see a 44% jump over the next few years.

The sweet and spicy aji amarillo, which translates to “yellow chili pepper,” has a fruity heat similar to cayenne, with notes of passion fruit and mango, which makes it a versatile addition to dishes, dips, and even cocktails.

The spice is a staple in Peruvian cuisine.

McCormick’s research team spotted aji amarillo popping up globally, from charred broccoli in London to oysters in Australia, proving its international appeal. The spice maker will begin selling it on February 3 for $9.99 and hold a food festival in Miami, serving menus made with the ingredients.
